For the meringue
• 9 large egg whites
• 225g light muscovado sugar
• 300g golden caster sugar
For the orange curd
• 2 large egg yolks
• grated zest and juice of 1 orange
• juice of 1 lemon
• 115g caster sugar
• 60g unsalted butter
• 1 cinnamon stick
• 2 cloves
For the sugar glass
• 250ml water
• 390g sugar
• 125ml liquid glucose
