3 ways with... plums
⚫ For a simple dessert, arrange halved, stoned plums in a snug baking dish. Pour over a little orange juice and drizzle over maple syrup. Tuck a couple of star anise and a cinnamon stick broken in two, amongst the plums, then bake in an oven for about 30 minutes at 180ºC/350ºF/Gas Mark 4.
⚫ To make flapjack, mix together 350g melted butter, 300g porridge oats, 140g plain flour, 50g chopped pecans, 250g soft light brown sugar and 3 tbsp date syrup. Pour half into a greased and lined 20cm x 20cm cake tin. Press down then top with a layer of 450g chopped plums. Sprinkle over 50g soft light brown sugar and 1 tsp mixed spice. Tip over the rest of the flapjack mix and press down. Bake for 45-50 minutes in a 200ºC/400ºf/Gas Mark 6 oven, until golden. Cool then slice into squares.
