Rice-ing star

Andrew Williams, from Salt House Bacaro restaurant in Liverpool, has won the Riso Gallo Young Risotto Chef of the Year competition for budding chefs aged 18-25 years old. The 20-year-old cooked caramelised onion and red wine risotto with butter-roasted pine nuts, crispy onions, radicchio and taleggio, finished with Valrhona chocolate, white alba truffle and chive oil.

For his prize, Andrew will enjoy three days’ work experience at Angela Hartnett’s Michelin-starred restaurant, Murano, in Mayfair, London. “Andrew’s risotto was a culinary triumph of precise, balanced flavours and delicacy, while retaining the creamy al dente texture of the finished risotto we judges were looking for,” said judge Paul Gayler. “He is a calm and focused young chef who has a great future in front of him.”

About Italia!

We have a splendid line-up of features to inspire your travels this month: our cover star Lake Maggiore has a wealth of stunning locations to explore, both around its shores and on the lake itself. If you like a good hike, our itinerary around the byways of a small corner of Maremma will defi nitely stretch your legs. For cricket fans we have the extraordinary tale of a most unlikely team – and they are really rather good! We have e-biking in the majestic Dolomites and we meet a 3-star chef there who’s really making a difference. And for culture vultures, we have the story of the rise, fall and rise again of Venice’s aptly-named La Fenice opera house.
