Artichoke and pecorino risotto

Risotto ai carciofi e pecorino

SERVES 4 PREPARATION 20 minutes COOKING 30 minutes

• 12 fresh or 12 char-grilled artichokes, or 8 frozen artichoke bottoms, thawed

• 1.5 litres hot vegetable or chicken stock

• 125g unsalted butter, plus extra for sautéing

• 1 onion, peeled and finely chopped

• 500g risotto rice

• 150ml dry white wine

• sea salt and freshly ground black pepper
