Panzanella

Panzanella is a typically Tuscan salad that makes good use of day-old bread

SERVES 2 PREPARATION 1 hour INFUSING 15 minutes

• 1 red onion, peeled and very finely sliced into rings

• 100ml white wine vinegar

• 2 tsp sugar

• ½ tsp salt

• 1 large yellow or red pepper

• 200g day-old rustic bread

• 500g ripe tomatoes, ideally in assorted colours and shapes

• 100ml extra virgin olive oil

• 50ml red wine vinegar

• 1 garlic clove, peeled and crushed (optional)
