04. Batch cook If you’re making a curry or spag bol, double up and individually portion into freezer bags. Speaking of which…
05. Use the freezer Frozen veg and fruit are a must.
06. Stock your cupboard I have a whole page dedicated in my book to this. If you have a well-stocked cupboard with spices, carbs and tinned essentials, you generally only need to pick up the fresh protein and veggies at the shops.
07. Take your time It’s not a race. Pick a meal you know you’ll have time to cook that night and enjoy the process.
08. Sharpen your knives Sounds simple, but makes a huge difference. It makes chopping easier and there’s less chance of the knife slipping. Get a good one and look after it.
09. Check the temperature If you don’t have the confidence to know when a roast chicken is ready, invest in a meat thermometer. You’ll get it right every time.
10. Taste as you go Adjust the seasoning as you’re cooking (though obviously avoid tasting when raw meat is involved).
