Fishouse

ONE of Oban’s longest serving chefs is Roy Stalker, head chef at the Waterfront Fishouse Seafood Restaurant and Bar, beside the CalMac ferry terminal overlooking the mountains of Mull and Isles of Kerrera and Lismore. The seafront fishouse has kept the same philosophy since Roy and Alex Needham took it over in 1999. ‘Our motto is:

Second chef Graeme Carter, chef Scott Duncan, commis chef Charlie Louis and head chef Roy Stalker

“From the pier to the pan as fast as we can”,’ Roy said, ‘we don’t do much to the fish. Fish speaks for itself.’ Both friends met their future wives working at the restaurant, and this year Roy and Michelle, and Alex and Carole, are celebrating their 15th wedding anniversaries.
