SAUCY MARINARA
Make a simple but satisfying broccoli side of marinara with your leftover purple sprouting broccoli. Heat a couple of tablespoons of olive oil in a pan over medium heat. Add chopped garlic and once it has cooked for a few minutes pour in a tin of chopped tomatoes, allowing them to simmer for a further few minutes before placing the purple sprouting broccoli into the pan too. Add seasoning to taste. Cover the pan and simmer for 10 minutes or for less time if preferred, this dish tastes best if the broccoli is tender but not overcooked.
