Here’s an easy idea from Erica Strauss’s book, The Hands-On Home (Sasquatch, £25): homemade vinegar dressings. Here are three recipes for you try; steep them for 3-4 weeks in a dark, cool place before serving.
• Tangy citrus: 1½ cups white wine vinegar and ½ cup peeled zest from 6-7 lemons, 6-7 limes or 3-4 oranges.
• Zesty garlic and herb:
1½ cups red wine vinegar, 4-6 cloves garlic, peeled and lightly crushed, ½ a bay leaf, 1 sprig of fresh rosemary and several sprigs of fresh oregano and thyme.
• Any berry: 2 cups white wine vinegar and 1lb fresh or frozen blueberries, blackberries, raspberries, or a combination, lightly crushed.
