Low-calorie cooking spray
1 onion, finely chopped
2 garlic cloves, finely chopped
4 skinless and boneless chicken breasts, cut into large chunks
1 tbsp mild curry powder
200g passata with onion and garlic
400ml hot chicken stock
200g fat-free natural fromage frais, plus extra to serve
Chopped fresh coriander, to serve
Sliced red onion tossed in lime juice, to serve
Freshly boiled plain rice, to serve
1 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic and stir-fry for 5 minutes. Add the chicken chunks and cook for 5 minutes, or until the chicken and onion are nicely browned.
2 Add the curry powder, passata and stock, season and stir well. Bring to the boil over a high heat, then reduce the heat to medium-low. Simmer for 15-20 minutes, or until the chicken is cooked through, stirring occasionally.
3 Remove the pan from the heat and stir in the fromage frais. Drizzle with the extra fromage frais and scatter over the coriander. Serve with the red onion, rice and a vegetable side dish, if you like.
