4 sheets leaf gelatine
600ml diet lemonade
2 level tbsp sweetener
35ml Pimm’s No 3 Winter
300g frozen mixed berries, defrosted (we used berries with cherries)
1 Soak the gelatine in cold water for 10 minutes, or until softened.
2 Meanwhile, heat 200ml lemonade in a small saucepan with the sweetener. When hot, remove it from the heat and set aside.
3 Squeeze out the water from the gelatine and add the gelatine to the warm lemonade mixture. Stir until dissolved, then leave to cool. Whisk in the remaining lemonade and the Pimm’s.
4 Divide 200g of the berries between 4 glasses. Pour a quarter of the Pimm’s mixture into each glass and chill for 4-6 hours, or until set. To serve, decorate each jelly with the remaining berries.
