There are certain foods that you need to be extra careful with when storing, preparing and cooking. These are two of the main culprits:

CHICKEN

As delicious as it is, chicken is also one of the most notorious members of the ‘high-risk foods’ group, and should only be handled if you stick to a strict set of guidelines. The Food Standards Agency details these as follows:

1. Cover raw chicken and store at the bottom of the fridge so juices cannot drip onto other foods and contaminate them with food poisoning bacteria such as campylobacter.

2. Don’t wash the raw chicken as this can spread germs by splashing. Cooking will kill any bacteria present.

3. Thoroughly wash and clean all utensils, chopping boards and surfaces used to prepare raw chicken; and wash hands thoroughly with soap and warm water after handling it. This helps to stop the spread of campylobacter by avoiding cross contamination.
