Warm Comfort for Frosty Winter Days

ALPINE PANCAKE

Kaiserschmarrn

SERVES 6-8. HANDS-ON TIME 40 MIN

"Although simple in its ingredients, this classic Austrian dish tastes rich and indulgent (its name means ‘emperor’s mess’). A deep, fluffy pancake is filled with boozesoaked raisins, shredded, then dusted in icing sugar and served with a tart fruit compote. Although this is really a sweet dessert, in the Austrian Alps it’s often eaten as lunch."

Kaiserschmarrn – it may not look elegant but it tastes wunderbar and fills you up

• 100g raisins

• 60ml schnapps, kirsch or rum

• 250g plain flour

• 6 medium free-range eggs, separated

• 3 tbsp caster sugar

• 1 tsp vanilla extract

• Finely grated zest 1 lemon

• 350-400ml whole milk

• 50g unsalted butter

• Icing sugar to dust

• Plum or raspberry compote to serve

1 Put the raisins into a small pan with the schnapps/kirsch/rum and heat gently. Take off the heat and set aside for at least 15 minutes to allow the raisins to soften and plump up.
