These larger-batch recipes are great for a big family or your Easter guests. Plus our prepare-ahead tomato sauce makes a rich flavour base


This nutritious sauce is the star ingredient in four of the following recipes. It makes enough for all of them, so keep it in the freezer until needed. Alternatively, the recipe makes a simple pasta sauce for six people, which works out at 234kcal and three of your five-a-day per serving.

Veg-packed rich tomato sauce

prep 10 min cook 30 min makes 4 batches (each batch is used in a recipe to serve 6) gluten free dairy free vegan

3tbsp olive oil 2 medium onions, inely chopped 3 garlic cloves, crushed 2tsp dried oregano or mixed herbs 1 large leek, cut into chunks 2 large celery sticks, cut into chunks 2 medium parsnips, cut into chunks 1 large red pepper, deseeded and cut into chunks 2 x 400g cans chopped tomatoes

1 Heat 1tbsp oil in a pan with a lid over a medium heat. Add the onions, garlic and herbs and cook for 5 min.

2 Meanwhile, put the leek, celery, parsnips and red pepper chunks in a food processor and pulse until they’re finely chopped but still have some texture.
