Chicken thighs with dukkah couscous salad

PREP 15 MIN COOK 20 MIN SERVES 4

DAIRY FREE

5tsp olive oil 200g giant couscous 2tbsp dukkah 450g skinless, boneless chicken thighs 3 spring onions, thinly sliced 1 ripe avocado, cubed 250g cherry tomatoes, halved 200g asparagus, green beans or sugar snap peas, boiled or steamed, then chopped Zest and juice ½ orange 40g pitted dates, finely chopped 1tbsp chopped fresh basil, mint or parsley

1 In a large pan, heat 1tsp of the oil over a medium-high heat. Add the couscous and half the dukkah, and cook, stirring well, for 1 min. Add 650ml boiling water, then reduce the heat and simmer for 8–10 min until the couscous is tender. Drain any remaining liquid, then set aside and keep warm.
