The mini carrot, cheddar and thyme rostis (March issue) were a huge hit with my children. I struggle to find interesting ways to get them eating vegetables and usually resort to the old ‘Eat your greens!’ mantra. But they wolfed these rostis down and begged for more. I’ve found I can freeze them uncooked and take as many as I need out of the freezer for a quick snack or supper idea. I’m always trying to cut down on how much meat we all eat while upping the vegetable content (tricky with fussy children) and these fit the bill perfectly. Thank you for this tasty idea.
