TRAILING BEHIND QUINOA, freekah, kasha and faro in the food fashion stakes, this old-school grain is nonetheless cheap and nourishing, with at least twice as much fibre as brown rice and a low GI. Pearl barley is simply barley with the outer bran layer removed, giving it a ‘pearly’ appearance. It has a chewy texture and delicate nuttiness, and absorbs flavours well.
