Take comfort with these delicious meat-free dishes – they’re perfect for sharing over a lazy bank holiday


With a great texture, cheshnut mushrooms work well in meat-free dishes. They’re packed with vitamin B5 (pantothenic acid), which is thought to help with reducing feelings of anxiety.


Broad (fava) beans are very high in folate (vitamin B9). This works alongside vitamin B12 and iron to form essential red blood cells and is a vitamin that’s vital during pregnancy.


Serves 4

2 tbsp olive oil

600g chestnut mushrooms, brushed clean and halved

6 shallots, halved

1 carrot, sliced

1 clove of garlic, crushed

½ tsp dried thyme

½ tsp dried rosemary

3 tsp plain flour 200ml vegan red wine

1 tbsp tomato ketchup 150ml hot water

Pinch of sea salt and black pepper

1 In a frying pan, heat 1 tbsp of the olive oil and cook the mushrooms over a medium-high heat for 10 mins, until softened and fragrant.
