We’ll bet when we mention beets, it’s the vibrant purple-coloured root that springs to mind. Their distinctive colour has won them favour among foodie influencers over the past few years, with beetroots regularly featuring in the most picture-perfect #SaladsOfInstagram. And with their sweet flavour and satisfyingly crunchy texture, it’s not surprising they’ve earned kudos, even before we consider their health-boosting properties. But if you want to reap all the nutritional benefits, we’re making a case for loving the leaves, too.
