With a Michelin star and knockout sea views from an elegantly austere dining room perched on a rocky outcrop, this is one of the most consistent spots for real bouillabaisse (see overleaf). This version is served with fve types of fsh including monkfsh, John Dory and scorpionfsh (l-epuisette.fr; 158 Rue du Vallon des Auffes; lunch and dinner Tue–Sat; three courses incl bouillabaisse £65).

2 LE RHUL

This long-standing classic is a 1940s seaside hotel with Mediterranean views and plenty of atmosphere, however kitschy. Its restaurant is also a reliable place to try genuine bouillabaisse, where the fsh is prepared tableside and served with typical condiments (hotel-restaurant-lerhul.com; 269 Corniche du Président John F Kennedy; lunch and dinner daily; bouillabaisse £40, lobster version £50).
