The marvel of miso

Getting to know miso: why the latest trend in fermented food is good for you.

You may already be aware that eating food containing a bit of bacteria can actually be very good for you.

The current popularity for fermented foods, otherwise known as natur al pr obiotics, offers a perfect and on trend way to get a health boosting dose of good bacteria. Naturally probiotic foods such as yoghurt, sauerkraut and kimchiar e known to be positively beneficial for health and well ness and act as a delicious means of replenishing the good bacteria in our gut.

Probiotic foods are formed through a process called fermentation whereby bacteria chemically alters food’s microbiological make-up. As this happens the bacteria secrete acids, proteins and enzymes which, according to Benjamin Wolfe, an assistant professor of microbiology at Tufts University, adds nutritional value to the foods. He adds: “The benefits people get from fermented foods come largely from improved digestibility and the nutrients the foods provide,” such as vitamin B and E.
