Perfect Puddings

'Steak' and Mushroom Suet Pudding

Serves: 4

Steak and mushroom suet pudding is a British classic! This version has the same textures thanks to the vegetable suet in the pastry, while the seitan steak pieces and the rich sauce and mushrooms give the same umami flavours.

For the 'steak':

• 100g (3.5oz) vital wheat gluten

• 4 tsp gram flour

• ½ tsp onion granules

• ½ tsp garlic granules

• ½ tsp dried thyme

• ½ tsp dried rosemary

• 120ml (½ cup) vegetable stock

• 2 tsp soy sauce

• 2 tsp vegetable oil

For the filling:

• 2 tsp vegetable oil

• 150g (5oz) mushrooms, sliced

• 2 tsp rosemary, chopped

• 2 tsp thyme, chopped

• 4 tsp Marmite

• 80ml (⅓ cup) Guinness

• 240ml (1 cup) vegetable stock

• 4 tsp cornflour + 2 tsp water

For the pastry:

• 150g (5oz) vegetable suet

• 300g (10.5oz) self-raising flour

• 1 tsp sea salt

• 200ml (⅞ cup) water

December has arrived! Anyone who loves their food has plenty to celebrate in this, the final month of the year, because sharing food with loved ones is part of what makes Christmas so special. However you spend the festive season, my guess is that it’s going to involve at least a little indulgence. Whether that means opening your advent calendar every morning to a small sweet treat, or planning the world’s biggest Christmas dinner, food is at the centre of so many of our festive celebrations. That’s why we wanted to make sure you don’t have to look too far for culinary inspiration; turn to page 22 for the start of our Christmas section.
