Sweet Recipes

Chocolate Brownies

Serves: 12

• 5 tbsp oil, plus extra for greasing

• 200g (7oz) dairy-free dark chocolate

• 170g (6oz) self-raising flour

• 3 heaped tsp cocoa powder

• 180g (6.5oz) golden caster sugar

Sea salt

• 1 tsp vanilla extract

• 230ml (8oz) soya milk

Icing sugar, to garnish

You will also need:

• Square baking tin, roughly 20cm

1 Preheat the oven to 180°C/350°F/Gas 4. Grease the baking tin with a little oil, then line with greaseproof paper. Place a heatproof bowl over a pan of simmering water, making sure the base does not touch the water. Break 150g (5oz) of chocolate into the bowl and allow it to melt, then set aside to cool slightly.

2 Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar and a pinch of salt. Stir in the vanilla extract, oil, milk and melted chocolate until combined.

3 Roughly chop and stir in the remaining chocolate then pour the mixture into the prepared tin, spreading it out evenly. Place into the hot oven for 20-25 minutes, or until cooked on the outside, but still gooey in the middle.

4 Once cooled, cut into small, bite-sized squares then sprinkle with the icing sugar before serving.

December has arrived! Anyone who loves their food has plenty to celebrate in this, the final month of the year, because sharing food with loved ones is part of what makes Christmas so special. However you spend the festive season, my guess is that it’s going to involve at least a little indulgence. Whether that means opening your advent calendar every morning to a small sweet treat, or planning the world’s biggest Christmas dinner, food is at the centre of so many of our festive celebrations. That’s why we wanted to make sure you don’t have to look too far for culinary inspiration; turn to page 22 for the start of our Christmas section. From Mince Pies (p.38) and the amazing Christmas Pudding Cake you can see on the cover (p.42), to a selection of cheeses and drinks, we have got you covered this month. We’re also taking a closer look CBD oil; chances are you’ve heard of it, but maybe you don’t know exactly what it is. We’ll talk you through it, and provide some recipe ideas for how to incorporate it into your daily diet. And we’re rounding out the recipes with some sweet and savoury puddings, and winter family favourites that will warm the bellies of everyone around the dinner table this December.
