CHOCOLATEY SWEET POTATO AND BLUEBERRY BROWNIE

Makes: Roughly 16-20 pieces
• 2 medium to large sweet potatoes
• 80g (⅔ cup) ground almonds
• 100g (½ cup) buckwheat or brown rice flour
• 8 Medjool dates (normal dates also work)
• 2 ripe bananas
• 50g (½ cup) fresh blueberries (frozen will work if defrosted)
• 4 tbsp cacao powder
• 1-3 tbsp pure maple syrup, to taste
• Pinch of salt
• Coconut oil for greasing
