The luscious lunchbox

Make this the year when you take time to nourish yourself and prepare delicious lunches that will help you feel recharged for the rest of the day

Author, Becky Alexander, and nutritionist, Michelle Lake, were inspired to write the recipes for their book, Packed, to offer an easy solution for delicious working-day lunches, without any hassle and for a sensible price. All the ideas are quick, realistic and full of nutritional value, and chapters include Get Up and Go, Salads and Slaws, Filling Flasks, Fork-free Meals, and Snacks and Bites, so there is inspiration for every moment of the day when hunger may strike.

As well as eating more healthily, if you make your own lunches, you’ll save money and time queuing to buy food; your stress will be reduced, as you’ll reclaim your well-earned lunchbreak, and you’ll return to your desk ready to face whatever the afternoon may bring.

Fresh figs are lusciously sweet and have a unique texture. They’re in season during summer so, for a winter alternative, try the dried version. Full of fibre, figs help to regulate your digestive system and are also a good source of bone-strengthening calcium and potassium to keep your blood pressure within a healthy range. Crumbly goat’s cheese, or a few slices of Parma ham or prosciutto, would also work well in this salad.
