Seasonal suppers

Cooking with the seasons is the secret to creating dream dinner-party menus and it’s the inspiration for a new book, Clodagh’s Suppers

CHOCOLATE BEEF CHILLI WITH JALAPENO AND CHEESE SCONES

The chocolate in this is utterly delicious and the chilli adds a silky texture. I always double the recipe when I am making it and freeze half of it!

● 50g salted butter

● 300g minced beef

● 1 small white onion or shallot, finely chopped

● 2.5cm piece of fresh ginger, peeled and grated
