• ½ butternut squash, peeled, seeded, and diced
• 1 tbsp olive oil
• 85g (3oz) mixed quinoa, rinsed and drained
• 2 Tenderstem broccoli spears, roughly chopped
• 100g (3½oz) canned red kidney beans
• ¼ cucumber, diced
• ½ red pepper, cored, seeded and sliced
• 2 tbsp green olives
• 1 tbsp walnut halves
• 30g (1oz) mixed leaf salad
• salt and freshly ground black pepper
