Prawn chow mein

Use your noodle and serve up our most effortless chow mein ever

SUPER SIMPLE

Serves 4

Ready in about 15 minutes

5 spring onions, roughly chopped

1 garlic clove

2cm piece fresh root ginger, peeled and grated

3 tbsp soy sauce, plus extra to serve

2 tbsp oyster sauce

½ tsp Chinese five-spice powder

¼ tsp mild curry powder

250g dried medium egg noodles

600g ready-prepared stir-fry vegetables

300g cooked, peeled prawns

1 Put the spring onions, garlic, ginger, sauces and spices in a blender with 2 tbsp water. Whizz into a paste, then transfer to a microwaveable container. Cover and microwave on high for 1 minute.

2 Boil the noodles and stir-fry veg together in a large saucepan for 2 minutes, then tip in the prawns and boil for a further minute. Drain, then return to the pan and scrape in the paste. Toss everything together and serve with extra soy sauce and freshly ground black pepper for sprinkling over.
