Pasta fantastica!

There’s a perfect recipe pairing for every kind of pasta. So step away from the plain spaghetti… here’s how to make the most of all the shapes under the Italian sun

Fusilli bucati with coriander and cashew pesto

Our low-Syn pesto adds tons of fresh herb taste and is so easy to make

SUPER SIMPLE

Serves 4

Ready in about 15 minutes

400g dried fusilli bucati pasta

300g runner beans, trimmed and sliced lengthways

For the pesto:

100g fresh coriander

4 level tbsp grated fresh parmesan

2 level tbsp roughly chopped unsalted roasted cashew nuts

2 garlic cloves, crushed

¼ tsp dried red chilli flakes

1 tsp finely grated unwaxed lemon zest, plus extra to garnish

200g quark

200ml cooled vegetable stock

Freshly ground black pepper

1 Cook the pasta according to the packet instructions, then drain and return to the pan. Boil the runner beans for 5-6 minutes, drain and cover to keep warm.

2 Meanwhile, to make the pesto, put all the ingredients in a food processor and blend until fairly smooth (add a splash more stock if it seems too thick).

3 Toss the pesto through the pasta, then divide the pasta and beans between 4 plates. Garnish with the extra lemon zest and serve.
