How to get those perfectly flat cake layers

We all want a perfect cake with crisp cake edges and super fl at top. It makes you look like such a probaker and it makes decorating a breeze. So what’s the secret? It’s simple and anyone can do it – the secret is baking strips!

Also known as cake strips or magic strips, you can make them at home or buy them pre-made. They’re designed to correct uneven baking by applying an insulating layer around the outside of a cake tin. Without insulation from the oven’s heat, the edges bake more quickly, while the centre tends to dome, crack or rise quickly before collapsing. In other words, it’s cake magic and everyone should use them. They’re also great if your oven heats unevenly causing a cake to bake faster on one side.
