FOR THE SPONGE

coconut oil, for greasing

120ml (4floz) soy milk

55g (2oz) vegan spread

1 tsp orange essence

120g (4¼oz) plain flour

100g (3½oz) unrefined caster sugar

1 tsp baking powder

¼ tsp fine sea salt

¼ tsp ground cinnamon

¼ tsp ground nutmeg
