Salted caramel tarts

By Bo’s Kitchen (boskitchen.com) Makes6| Prep20 mins| Cook10 mins| Calories652(per tart)

FOR THE CRUST

180g (6oz) raw buckwheat 50g (1¾oz) oats 130g (4½oz) dates, pitted 50ml (2floz) water 4 tbsp coconut oil, melted

FOR THE FILLING

400ml (14floz) tin of coconut milk 175g (6oz) coconut sugar 1 tbsp tahini ½ tsp sea salt 230ml (8floz) plant milk (I used soya) 1 tsp vanilla extract 5 tbsp cornflour FOR THE CARAMEL

85g (3oz) dates, pitted ½ tsp sea salt 1 tbsp nut butter (I used almond) 60ml (2floz) hot water

FOR THE TOPPINGS

50g (1¾oz) blueberries 3 sprigs of fresh mint 3 tbsp buckwheat

1 Prepare the crust by adding the buckwheat to a food processor and blending until fine and crumbly. Add in the oats, dates, water and coconut oil and pulse until it starts to stick together. Test it with your fingers to make sure it’s sticky enough. If it’s too dry, add more water a tbsp at a time. Press the crust evenly into mini tart tins and set aside in the fridge.
