Foraging delight – fresh and free spring greens
Spring is definitely in the air. As we slowly emerge from the cocoon of winter and its cosy indoor days and nights, what better way to enjoy the longer, warmer days than with a spot of foraging?
I first started to get into foraging a couple of years ago, when on a walking holiday in the Welsh borders we stumbled across huge patches of ramsons (or wild garlic), growing by the side of the path. Once you start to notice it, you will realise that it’s everywhere. We picked a small bunch and added it to our pasta and tomato sauce that evening – what an amazing, fresh, and totally free way to liven up a dish.
