This fuss free loaf is a great centrepiece for your Christmas

OOH LA LA PUFF PASTRY - WRAPPED LENTIL LOAF

Serves 5-7

• 3 tbsp ground chia or flax seeds

• 80ml (⅓ cup) warm water

• 1 tbsp olive oil

• 4 cloves garlic, minced

• 2 medium carrots, peeled and chopped

• 2 stalks celery, chopped

• 1 white onion, chopped

• 150g (1½ cups) button mushrooms, sliced

• 1 tsp dried thyme leaves

• ½ tsp salt

• ¼ tsp black pepper

• ¼ tsp cayenne pepper

• 200g (1 cup) uncooked green or brown lentils

About Vegan Life

It’s the most wonderful time of the year which means dark nights and crisp cold days, rich cinnamon-infused foods and, in my house, Miracle on 34th Street on repeat. I turn into that annoying person that most people hate at Christmas. I start listening to carols in early November, wearing ridiculous jumpers and get myself into a state of overexcitement for the entirety of December leading to near exhaustion by Christmas Eve. Combining my passions for Christmas and veganism for the December issue of Vegan Life, therefore, has been immensely satisfying for me and it should be just as satisfying for you because we have a bumper issue! This month we have made Vegan Life even bigger (and better) with 122 pages full of your favourite regulars as well as interviews, news and the best vegan recipes around. These extra pages give you the perfect excuse to curl up in a chair just a little longer and have some you-time to read and escape the ever-so-slightly-manic Christmas hysteria. In a whistle stop tour of the magazine we have; an interview with Ingrid Kirkman, founder of PETA; Fat Gay Vegan on shopping at independents; an article on the importance of iodine in our diets and an excellent travel section focusing on the vegan scene in Brazil. Finally, I want to share some very exciting news from Vegan Life HQ. As some of you may know we were nominated for the Best Vegan Magazine by the VegFest UK Awards and… we won! I want to say thank you to everyone who voted for Vegan Life and to those who read the magazine. We count ourselves incredibly lucky to have such a loyal readership who are so supportive of what we do. Vegan Life was founded, and is still run, by a team of vegans passionate about making a change in the world.
