Over 20 years ago, my mum came up with a chicken-based version of this dish for the Jewish holiday of Passover. Of course, when my mum stopped eating meat, her first move was to come up with a vegan version of our beloved recipe. Whether or not you celebrate Passover, this is a fun recipe, especially for kids. Keep it classic with salt and pepper crisps, or try adding a pop of flavour with your favorite kind of crisps (my mum’s is barbecue).
