Bullet-proof mocha mushroom smoothie

Serves 1 | Prep 5 mins | Cook none | Calories 292 (per serving)

30g (1oz) vegan chocolate protein powder

1 tbsp raw cacao powder

½ tsp ground cinnamon

1 tbsp almond nut butter

2 tsp xylitol, erythritol or stevia, or to taste

2 tsp lion’s mane mushroom powder or medicinal mushroom powder

150ml (5floz) hot or cold brewed organic coffee, yerba mate or green tea

150ml (5floz) almond milk

1 tsp coconut oil, melted

1 Put all the ingredients into a blender or food processor and whiz until smooth and creamy. Serve immediately.

TIP Lion’s mane is particularly beneficial for brain health. Studies suggest it can improve cognitive function, nerve regeneration, remyelination (the repair of the covering of the nerve fibres), and increased nerve growth factor (NGF), making it useful for preventing, and even reversing, mild cognitive decline, including early Alzheimer’s.
