Serves 4-6 | Prep 30 mins | Cook 4 hrs | Calories 692 (per serving)

1 russet potato, peeled and diced

3 celery stalks

½ a large onion, diced

3 large carrots, peeled and diced

450g (6 cups) broccoli florets, cut into smallmedium pieces

900ml (4 cups) vegetable stock (broth)

450ml (2 cups) water

2 tsp salt

1 tsp pepper

2 tbsp flour

1 tbsp minced garlic

5 tbsp olive oil fresh parsley, to garnish


300g (2 cups) raw cashews

230ml (1 cup) water

60ml (¼ cup) almond milk

1 tsp mustard powder

1 tsp paprika

1 tsp garlic powder

70g (1 cup) nutritional yeast
