Winter warmers Comfort soups

When the temperature drops outside it’s time to warm up your insides with tasty, nutritious soups

Italian white bean and cherry tomato

Serves 4 | Prep 10 mins | Cook 25 mins |

Calories 174 (per serving)

1 tbsp olive oil

1 onion, peeled and finely chopped

1 carrot, peeled and finely chopped

1 courgette, finely chopped

2 garlic cloves, peeled and finely chopped

10 cherry tomatoes, halved

400g (14oz) tin of cannellini beans, drained

1 tsp dried oregano

2 vegetable stock cubes

1 Heat the oil in a pot over a medium-low heat. Fry the onion, carrot, courgette and garlic for 5-10 minutes until they are soft.

2 Pop in the cherry tomatoes along with the beans and oregano and mix everything together.

3 Add a litre of boiling water and the crumbled stock cubes, and then bring everything to the boil. Turn down the heat and simmer for 15 minutes.
