PASTA UNDER 500 CALS

Pasta dishes are always versatile and with these recipes every serving is less than 500 calories

Minestrone soup

Minestrone is such a versatile soup. It is basically an assortment of vegetables, some beans and pasta. In Liguria it is topped with pesto. This is a Ligurian version with borlotti beans, other regions use cannellini or white beans. This version uses mostly winter vegetables; in the spring, try it with asparagus and broad beans. In the summer, try it chilled.
