Breakfast sausages

By Nadine Horn and Jörg Mayer Makes6sausages | Prep5 minsplus chilling | Cook45 mins| Calories162(per sausage)

150g (5¼oz) vital wheat gluten

1 tbsp chickpea flour

2 tbsp nutritional yeast flakes

1 tsp onion powder

½ tsp ground nutmeg

½ tsp minced fresh sage

½ tsp freshly ground black pepper ¼ tsp ground allspice ¼ tsp dried thyme

1½ tbsp olive oil

1 tbsp soy sauce

1 tbsp maple syrup

1 Mix together the vital wheat gluten, chickpea flour, nutritional yeast, onion powder, nutmeg, sage, pepper, allspice and thyme in a medium bowl. In a small bowl, mix together the olive oil, soy sauce, maple syrup and 275ml (10floz) water. Stir the wet ingredients into the dry ingredients. Knead briefly until well combined.
