Satisfy those midday munchies with these delicious dips, toasties, salads and soups!

Heart of palm and watermelon ceviche

Serves 1-2 | Prep 10 mins | Cook none | Calories 200 (per serving)

90g (½ cup) tomato, diced

26g (¼ cup) jalapeño, diced

50g (⅓ cup) red onion, diced

145g (1 cup) chopped heart of palm

150g (1 cup) watermelon, diced

40g (⅓ cup) cucumber

5g (¼ cup) chopped coriander

125ml (½ cup) lemonade

¼ tsp garlic powder

¼ tsp pepper

½ tsp chilli flakes

½ tbsp salt


½ avocado, sliced

unwaxed lime, quartered

1 Finely chop and cube the tomatoes, jalapeño, red onion, heart of palm, watermelon, avocado, cucumber, and coriander. Place in a large bowl and mix with garlic powder, pepper, chilli flakes, salt, and lemonade.

2 Serve with your favourite tortilla chips, on tostadas, or just eat as is!
