Broccoli and cannellini soup

Serves 2-3 | Prep 10 mins plus soaking | Cook 40 mins | Calories 505 (per serving)

300g (1½ cups) raw cannellini beans

4-5 tbsp extra-virgin olive oil

1 garlic clove, peeled

4-5 broccoli florets, chopped into pieces and steamed

a pinch of sea salt

white pepper, to taste

1 Soak the cannellini beans overnight in water.

2 The following day, rinse and drain the beans.

3 Add the oil to a heavy bottom saucepan and gently cook the garlic until golden.

4 Add the beans and cover with plenty of water.

5 Add salt and pepper and cook for about 40 minutes, or until the beans are tender.

6 Add the cooked broccoli and allow the flavours to infuse before serving.

Creamy lentil and carrot soup

Serves 4 | Prep 10 mins | Cook 50 mins | Calories 295 (per serving)

1 leek, washed, trimmed and cut into rounds

200g (1 cup) red lentils

2 carrots, washed and cut into rounds

700ml (3 cups) freshly boiled water

1 tsp ground cumin

3 tbsp extra-virgin olive oil

a pinch of sea salt

white pepper, to taste
