Cauliflower Carpaccio

Serves 4–6 as a sharing platter

This is a wonderfully light and refreshing dish. Be sure to generously dress the thinly sliced cauliflower and other vegetables at least 20 minutes before serving, which will give the flavours a chance to meld and soften slightly, but leave some bite.

• 200g (7oz) cauliflower florets in mixed colours
