“I found out I was coeliac just over 10 years ago. I was unwell for about six months, but I was finally diagnosed with coeliac disease and Sjögrens syndrome. It was a hard transition, but it was also life changing. Now I sleep better, my skin is improved, I stopped being ill and I’m now full of energy. I don’t think you realise how unwell you have been until you are free from it.
“I always make sure I have a lot of milk in my diet, I take an extra glass with both breakfast and dinner. Days where I am due to run I swap my usual morning omelette for a bowl of porridge. I fit my runs in at lunchtime as I have two young children and I know oats will keep me full and energised. “Lunch times I always pack salad so it is easy to get some great healthy carbs in. Dinner times are a lot easier as I have more time to be creative. I have recently started cooking more often with sweet potatoes, and I also have started Meat- Free Mondays and cook with a lot more vegetables and beans.
