If there’s one thing the last six months have taught us, it’s that we’re all capable of living a more simple life. Hey, we might even enjoy it! As part of this, many people have discovered a newfound love of cooking, spending time in the kitchen that usually would have been spent in a restaurant or going out, and relegating readymeals to a distant memory.
But something that seems to put people off cooking vegan food is the myth that it’s too expensive. So we wanted to banish that assumption once and for all with our special budget edition of VFL. Vegan cooking can be expensive if you want it to be, just like any cuisine, but you can also cook some delicious, flavoursome dishes with just a few nutrient-rich ingredients. From page 12 you’ll find inspiration for everything from our pesto and broccoli tortilla pizza cover star to chickpea stew, shakshuka with potatoes and super veggie fried rice. Enjoy!
An important element of successfully cooking on a budget is reducing your food waste as much as possible. This is the life mission of Max La Manna, so we thought he was the perfect person to join us on page 26 to share an incredible concept – regrowing fruit and vegetables from the off cuts you would usually discard. It’s really fascinating and even if you’re not usually much of a gardener, we encourage you to give it a go. Your patience will hopefully be well rewarded.
