Potato farl breakfast

These are so simple to make. Leave out the spring onions if you prefer them plain or don’t have any.

MAKES 4

PREP 15 mins plus cooling

COOK 30 mins

EASY

400g potatoes, such as Maris piper or King Edward, cut into chunks

100g plain flour, plus extra for dusting

½ tsp baking powder

2 spring onions, finely sliced, plus extra to serve (optional) 

2 tsp sunflower oil 

To serve

crispy fried eggs and smoked streaky bacon or veggie alternative

1 Tip the potatoes into a saucepan, cover with cold water and salt well. Bring to the boil and cook for 12-15 mins until tender. Drain thoroughly and leave in the colander for 5 mins to steam-dry.

2 Tip the potatoes into a sieve set over a bowl and, using the back of a ladle, push them through the sieve. You can also use a potato ricer. Add the flour, baking powder, spring onions and a generous pinch of salt. Mix well until it forms a dough. Lightly flour a clean surface and tip the dough out. Roll out until 1-2cm thick and cut into 4 wedges. 3 Heat the oil in a non-stick frying pan over a medium heat. Cook for 5-6mins until browned on one side, then flip and repeat, adjusting the heat if needed. Scatter over the extra spring onions, if using, and serve with crispy fried eggs and bacon.

Asparagus
Although it’s usually quite expensive in shops, asparagus is simple to grow at home – it just takes a bit of time. It’s rich in folic acid and vitamins A, C, K and B6 so packs a powerful nutritional punch.

These are often underrated veg – they are essentially cabbage without the dense heart. The plants are easy to grow and respond really well to a little compost. You can harvest them through April and May and they’re so versatile in cooking.

Chana dal with spinach
It’s usual to use chana dal for this dish but you could also make it with split yellow peas. Both have a robust, almost meaty flavour which stands up well to leafy green vegetables. Add the softened spinach at the last minute so that it retains its fresh grassy-green colour. This dal is finished with a fried tarka flourish, made with sizzling spices, garlic, ginger and the sharpness of green chillies. If you have a pressure cooker, you can cut the chana dal cooking time to 30 mins.
Fish fry
This fried fish doesn’t have a batter or crumb coating. Instead, nutty-tasting cumin, turmeric and warming chilli are mixed with lime juice and rubbed over white fish fillets to great effect. My friend Yael Jhirad made this simple and delicious snack for me at her home in Alibag, a balmy coastal town about an hour’s ferry ride from Mumbai, across the Arabian Sea. She used rawas – a local white fish, known colloquially as Indian salmon, even though it has nothing in common with the Atlantic variety that we’re familiar with. Any firm-fleshed white fish will hold up well to this winning blend of spices, though.
