UMAMI GAINS
It might be time to add miso soup or a tasty broth to your supper. A US study found that eating a broth rich in umami, or savoury flavours, causes subtle changes in the brain, so we make better food choices. After healthy women tucked in to broth, researchers measured their inhibitory control (which we need for self-regulation) at an all-you-can-eat buffet. They wore special glasses so scientists could track eye movement while a brain scan checked activity. After the soup, the women had better self-control at the buffet and the area of the brain that is linked to successful self-regulation when choosing food was more active. Also, those at higher risk of obesity consumed less saturated fat. So a spoonful of broth makes the cravings go down.
