Welcome

As much as we extoll the virtues of heading into the kitchen to immerse yourself in a session of chopping, stirring and blending to unwind at the end of a long day, we also live in the real world. We know that sometimes, even though you’d like to be able to enjoy a healthy, nutritious dinner rather than succumbing to the temptations of a ready meal, you don’t always want to spend hours cooking. And more to the point, slaving over the washing up after you’ve used every pan/bowl/utensil in your cupboards. So for this reason, we’re big fans of the one pot (or pan, or tray - the concept is the same). All your ingredients are put in one vessel and pretty much left to their own devices to cook, with a little intervention from you at key moments. And one pots are perfect for this time of year as they’re generally packed with seasonal vegetables and pulses to produce a really warming dish that’s guaranteed to perk you up on a cold winter evening. We’ve put together a selection of our favourites from page 12, and we hope you enjoy them as much as we do. Get in touch and let us know which ones you try!

Being in the midst of yet another lockdown, we know how diffi cult it can be sometimes to fi nd the positives in the everyday, so we’ve packed this issue full of features to look after your wellbeing too.
