American-style crayfish stew

INGREDIENTS
✱ 2 heads garlic, unpeeled ✱ 5 bay leaves ✱ 3 tsp seafood seasoning ✱ 2 oranges, halved ✱ 2 lemons, halved ✱ 750g new potatoes ✱ 4 corn on the cob, peeled and cut in half ✱ 450g smoked sausage, sliced ✱ 8 large crayfish ✱ salt and pepper
TO SERVE
✱ dill sprigs ✱ red chilli flakes ✱ Louisianastyle hot sauce
METHOD
1 Fill a large, deep stock pot with 6 litres of water from the tap – there is no need to add a stock cube as you’ll get the flavours from the fresh ingredients. Add the garlic heads, bay leaves, seafood seasoning, oranges, lemons, and potatoes. Stir everything together and slowly bring to the boil. Once boiling, reduce the temperature down to a simmer and let the stew cook for approximately 20 minutes.
