The ups and downs of finding vegan food when out and about

I’m just back from another trip across the pond teaching Michelin star chefs how to ‘veganise’ their menu. I have been doing this for a long time now but it is only in this last year that I have not had to get my cotton buds out to get it through to them. Vegans do not want to eat risotto and fruit for every meal!
The first time I was motivated to do this was when visiting a beautiful historical place 18 years ago in France called Èze. I booked to eat at the Chèvre d’or, advertised as a 5 star gastronomic delight. The place was breathtaking, not only from the 15 minute climb up the hill through the ancient cobble streets to get there, but also from the smell of herbs such as rosemary, thyme and oregano that hit you as you walked in, getting my gastric juices preparing for what I imagined to be the meal of a lifetime.
